The PALTest is a specific immmunoassay on the ELISA format for the measurment of the activity of bovine alkaline phosphatase (ALP) in bovine milk and cheeses

The PALTest is a specific immmunoassay on the ELISA format for the measurment of the activity of bovine alkaline phosphatase (ALP) in milk and cheese from cow. It uses a monoclonal antibody specific for the ALP form bovine milk. The enzymatic activity of the ALP is used to verify the heat treatment (thermization, pasteurization) applied to dairy products. The monoclonal antibody used in the PALTest does not cross react with exogenous alkaline phosphatase (bacterial, microbial, fungal) and is also insensitive to the presence of inhibitors of the ALP.

The use of the kit can be automated (ELISA format) and allows the simultaneous determination of 42 samples in duplicate.

The PALTEST can be used on whole and semi-skimmed cow’s milk and with the following cheeses made with cow’s milk:

  • Blue-veined cheese
  • Uncooked pressed cheeses
  • Hard cheeses
  • Soft cheeses
  • Lactic cheeses

This test does not replace the reference methods used for the official control of the heat treatments applied to milk and cheese.
